Chapter Writing

It's hard to write a structured book chapter.

I stared at my screen today for a few hours and only wrote two pages of text, and for most part, it wasn't very good nor informative. I then had a meeting where I asked my supervisor about the contents that should be in the chapter so I sort of have a much better idea now on the content. I received an email from the editor about the formatting, but not on the content so I didn't have that much to go on.

I tend to find it is much easier to "ramble" write than structure and while I can write journal papers much easier, it is because there is a question in mind that we are addressing and discussing. In a book chapter, there is a topic, not a question, and that makes it challenging.

So, for what I will write about, it will be about spray drying fundamentals, with application to nutraceuticals and functional foods. I don't know how long it is meant to be, or how much I will be able to write, but at least I sort of have some kind of forward direction to go with when I get back to it.

Who is the intended audience? What background knowledge do they have? What kinds of info might they expect from this kind of handbook?
